What If..? S1E8 & Avengers Age Of Ultron/Guardians of the Galaxy Vol. 2 timeline

My autism is eternally locked in Mortal Kombat with my ADHD causing these thoughts to keep me up at night...

It's well established that Avengers Age of Ultron and Guardians of the Galaxy Vol. 2 take place in the year 2015, Disney+'s timelime has put Guardians 2 just before A.O.U but this could just mean that they happen concurrently, I would argue that although they do happen at pretty much the same time, A.O.U should be placed before Guardians 2. But before that, think about this...

In the What If..? series, we see different universes that are similar to the main one we've been following, but with some differences. Season 1 episode 8 shows us what if Ultron won, referring to him defeating the Avengers in A.O.U and becoming Vision. We see Ultron (now as Vision) defeat the Avengers roughly half way through the plot of A.O.U and then shortly after, Thanos shows up with an almost completed Infinity Gauntlet (only missing the Mind Stone which is in Vision's head). This scene tells us that this universe is a lot more different than we realise.

Firstly, Thanos begins his infinity conquest early, we don't get an official answer as to why but there are clues. Lets go through this one stone at a time: the Time Stone, we know that the Time Stone was on earth in 2015 and if Ultron has nuked the entire planet, then we can assume that the sorcerers are all gone too, leaving the Time Stone unprotected, giving Thanos 1 reason to start his conquest early.

The Space Stone; if Ultron defeated Thor on earth, then Asgard would be without its greatest defender, we know that Loki took over the throne while disguised as Odin back in 2013, leaving Odin on earth and presumabley dead now, if Odin is dead then Hela should have been freed but we have no idea where she is during all of this, but Ultron most likely would have killed her anyways. Going back to Asgard, the Space Stone would have been undefended meaning that Thanos would have yet another reason to start his Infinity quest early.

The Reality Stone being with the Collector on Knowhere at this point in the timeline doesn't change anything, so we can just move onto the Power Stone. This Infinity Stone should have been on Xandar with the Nova Core after the events of the first Guardians movie, but when we see Infinity Ultron go to Xandar, the planet looks fine and doesn't seem to have suffered any attack (obviously ignoring the present attack from Ultron). So if Xandar seems fine then we must assume that in this universe, the Power Stone was somewhere else, still possibley with the Nova Core, just on a different world. But we do know that the events of the first Guardians movie still occured in this universe to some extent, due to what we see happen on the Sovereign.

The Soul Stone. When Infinity Ultron attacks the Sovereign system, we get a brief glimpse of the Guardians, as they would be here roughly in the timeline, meaning that the start of Guardians 2 takes place near the end of A.O.U. In this quick shot we see Gamora very clearly still alive, meaning that Thanos couldn't have sacrificed her to obtain the Soul Stone... So who did he sacrifice? My first thought was that in this universe, Thanos loved Nebula instead of (or as well as) Gamora. But we can assume it wasn't Nebula because the reason the Guardians were helping the Sovereign was to obtain Nebula, who the Sovereign had captured previously. So if not Gamora or Nebula, then who? We can presumabley rule out the rest of the Black Order as Thanos would of just sacrificed them for the Soul Stone in the first place, saving him the trouble of kidnapping Gamora in Infinity War.

But all of this is just assumptions and speculation. The whole point of this show is that every universe is different, whether it be slightly or massively. The show is called "What If..?" so we can't really rely on the knowledge we have from the main universe, because the whole point is that these events are different.
